If Vivint or its representative truly forged your signature, then that is fraud. You should consult an attorney.
Security alarm salespeople, particularly those selling door-to-door, are some of the most unscrupulous people on earth and think nothing of trying to frighten people into accepting their services with tales of break-ins and assault. If your signature was indeed forged, it is highly unlikely that Vivint itself knew the salesperson was doing that, but they SHOULD be very anxious to identify and correct any such problems. They should also correct and identify over-selling of services, where people are paying for services that they're not aware of and don't understand, as you describe. The alternate, cheaper services you describe are likely for a regular security system and not a smart system. You are in theory getting a lot more.
In this case, you say you don't have the security cameras you were supposed to get and you don't have the means to operate the thermostats etc. It is possible that you are supposed to use an app on your phone for operating the system. If so, the installers should have a) ensured that you HAVE a smartphone b) helped you set it up.
In my view, Vivint needs to send a senior rep over to check your system, find out what is missing, and adjust your bill as necessary - for instance, if you really did not get the security cameras, then what you paid should be rebated.
Did you receive a copy of the contract? The trend is to bring around a tablet and have people sign on that, and in my view that is just asking for trouble. The signer can't read it properly and has no good record.
If your signature really was forged, then Vivint should remove its equipment, rebate overcharges, and release you from any further obligations - and if not, you should take it to court (Small Claims would probably do it).
If you did unwittingly sign for a 5-year contract on a tablet or similar, then I think you should accept a visit from a senior rep (not the salesman you had) and get a thorough test and explanation of the system, refund for services paid for but not received, and continue for the 5 years.
